摘  要:采用水溶性壳聚糖对南美白对虾进行保鲜处理,观察保鲜剂处理组和对照组的贮藏过程中品质指标的变化,对两组样品货架期末腐败菌进行了分离鉴定,并进一步用该壳聚糖对分离出的腐败菌进行了抑菌实验,结果表明:水溶性壳聚糖保鲜剂能够将南美白对虾货架期延长3d;并使得南美白对虾贮藏过程中的细菌菌相发生变化,在货架期终点时,对照组的优势腐败菌为Aeromonas和Pseudomonas,保鲜剂处理组的优势腐败菌则变成Pseudomonas;抑菌实验表明,壳聚糖对南美白对虾体内腐败菌均有不同程度的抑菌作用。Penaeus vannameiwas preserved with special water-soluble chitosan. The quality changes of the group (treated with chitosan) and the control group were evaluated by using sensory assensment, chemical and microbial analysis. The spoilage microorganisms on the end of shelf life were isolated and determined. The inhibitory rates of chitosan on different spoilage bacteria were evaluated by fungistatic test. It was found that the shelf life of Penaeus vannamei was extended 3d by chitosan,and the spoilage micorflora was also changed. The dominant spoilage bacterias at the end of shelf life of control were found to be Aeromonas and Pseudomonas. However,the dominant spoilage bacteria of Penaeus vannamei changed to be Pseudomonas after treated with chitosan. Chitosan showed different inhibitory activity on different spoilage bacteria.
