摘  要:玉米含有多种营养成分,其中粗纤维、Mg、亚油酸含量丰富,对人体健康极为有利;糊精有着和蔗糖相似的水溶性和增黏性,比木糖醇成本低很多,且不会引起血糖剧烈波动;小苏打不含有泡打粉中对人体有害的Al元素。用玉米粉部分代替小麦粉、糊精代替蔗糖或木糖醇、用小苏打代替泡打粉,研制出色泽金黄、口感细腻、有玉米天然香味的营养丰富的健康食品-无糖玉米蛋糕,适合普通百姓食用。Corn is rich in various nutrition, especially fiber, Mg and linoleic acid, which can greatly benefit people's health. Dextrin is similar to sucrose in melting of water and viscosity. But its cost is lower than that of xylitol and it won't cause fierce change of the glucose in blood. Besides, in soda powder, there isn't AI element existing in baking powder, which is harmful to people's health. Using corn powder instead of wheat powder, dextrin instead of sucrose and xylitol, soda powder instead of baking powder, we have developed non-sucrose corn cake, a kind of healthy food with golden color, fine taste, natural corn smell and rich nutrition.
