摘  要:目的了解郑州市中原区凉皮、米皮的卫生状况,为卫生监督管理工作提供依据。方法随机抽查中原区36家凉皮、米皮店的基本卫生设施、从业人员体检情况和卫生管理情况,对其销售的凉皮、米皮及使用的餐具进行采样检测。结果各凉皮、米皮店的卫生设施基本到位,从业人员有效健康证持有率为89.80%,有效卫生许可证持有率88.90%,样品检测合格率为75.00%,餐具消毒合格率为85.76%,卫生管理工作较差。结论应加强对凉皮、米皮制作销售过程中影响其卫生质量的关键控制点(CCP)的监管,加大对凉皮、米皮店从业人员的卫生知识培训,加强对凉皮、米皮的检验检测,杜绝不合格产品销售,保障广大人民群众的身体健康。[ Objective] To realize the sanitary situation of liangpi and mipi in Zhongyuan district of Zhengzhou city, provide evidence for sanitary supervision and management. [Methods]The basic sanitation facilities, physical examination of workers and sanitary management of 36 Liangpi and Mipi shops were checked randomly. The liangpi, mipi and dishware in those shops were sampled and detected. [ Results ] The sanitation facilities of Liangpi and Mipi shops were eligibility. 89.80% practitioners had effective healthy card. 88.90% shops had hygienic license. The eligible rate of samples and dishware disinfection was 75.00% and 85.76% respectively, but the sanitary management was relatively bad. [ Conclusion]The supervision on critical control point (CCP) in the course of producing and sale of Liangpi and Mipi should be improved. The training of sanitary knowledge among workers in Liangpi and Mipi shops and the test of Liangpi and Mipi should be strengthened. The distribution of unqualified productions should be forbidden to ensure the health of people.
