摘 要:研究了高取代度羟丙基玉米淀粉溶液的流变学性质及其影响因素。结果表明:高取代度羟丙基玉米淀粉在5%~20%浓度范围,20~40℃范围内呈现假塑性流体特征,符合幂定律;高取代度羟丙基玉米淀粉浓度越高,温度越低,其假塑性越明显;取代度对羟丙基玉米淀粉的流变性影响较显著,而pH值的影响则较小;高取代度羟丙基玉米淀粉具有剪切稀化性质,其表观粘度受剪切速率的影响并不太明显。Rheological properties of hydroxypropylated corn starch with high molar substitution and its affecting factors were studied.The results indicated that hydroxypropylated corn starch with high molar substitution solution showed the pseudoplastic chracteristic which accorded with power law τ=k·rm when concentration ranged from 5% to 20% and temperature ranged from 20℃ to 40℃;the pseudoplastic characteristics became more and more obvious as its concentration increased and temperature lowered;the effectt of molar substitution on rheological properties was greater,but effect of pH was weaker;hydroxypropylated corn starch with high molar substitution had the shearnature and the effect of shear rate on apparent viscosity was not obvious.
