摘 要:研究了苹果渣多酚经大孔吸附树脂纯化前后的体外抗氧化活性的变化情况。考察了自然风干、50℃烘干和真空冷冻干燥苹果渣对多酚提取量的影响;通过对比AB-8,XDA-5和D4020三种大孔吸附树脂的静态吸附和解吸性能,并进行筛选,对比了苹果多酚经大孔吸附树脂纯化前后对DPPH自由基、羟基自由基和超氧阴离子自由基的清除能力。结果表明,真空冷冻干燥苹果渣的多酚提取量最大;D4020静态吸附率和解吸率均最高;纯化后苹果多酚的抗氧化活性明显提高。The changes of the apple pomace polyphenol's antioxidant activity which was purified by macroporous resin was studied before and after was studied in this paper. The impact of the natural dry, 50 ℃ vacuum drying and freeze-drying on the apple pomace polyphenol extraction was inspected; the absorbing and eluting capacities of three macroporous resin AB-8, XDA-5, D4020 was contrasted; Scavenging ability for the DPPH radical, hydroxyl radicals and superoxide anion radical of apple polyphenols was compared with that of the apple polyphenols purified by macroporous resin. The results show that the vacuum freeze-drying apple pomace polyphenols extracts is the largest; D4020 had the highest absorbing and eluting capacities; the antioxidative activity of apple polyphenols purified has improved significantly.
