“绿化9号”桃果实软化及果胶代谢中乙醛作用的影响

摘  要:以晚熟品种"绿化9号"桃为试材,用0,0.5,1.0和2.0 mL/kg乙醛处理果实12 h后,分别贮藏于室温(20±1)℃和(0±1)℃下,研究桃果实软化及果胶物质代谢中乙醛的作用。结果表明:2个温度下,乙醛处理有抑制桃果实呼吸强度的作用。0℃下,2.0 mL/kg和1.0 mL/kg乙醛处理可抑制果实果胶甲酯酶(PE)和β-半乳糖苷酶(-βGal)活性的增加,减轻果实软化,但对原果胶含量和可溶性果胶含量的影响不显著;室温下,乙醛处理促进PE,-βGal活性的增加和可溶性果胶含量的上升,以及果实软化。PG活性受乙醛处理的影响,与果实硬度、原果胶和可溶性果胶含量等关联性不明显。"Lvhua9" peaches(Prunus persica L. )were fumigated with 0,0.5,1.0and2.0 mL/kg acetaldehyde(AA) forl2 hours, then stored at room (20±1)℃or low (0±1) ℃ temperatures. The effects of AA on the softening and pectin metabolism in the fruits were investigated. It showed that the respiration rates of the fruits with AA stored at both of the temperatures were decreased to some extent. During storage at 0 ℃ the treatments at 2.0 mL/kg and 1.0 mL/kg AA inhibited significantly the activities of pectinmethylesterase (PE) and β-galactosidase (β-Gal), delayed the softening of fruits, but had little influences on the contents of the depolymerization of propectin and water soluble pectin (WSP) . At 20 ℃ AA tended to enhance the PE, β-Gal activities and the WSP increasing, thus promoted the softening of fruits. No relations were observed among polygalacturonase (PG) activity and fresh firmness, pectin metabolism in peaches with AA.
