话梅中复合甜味剂配方的研究

摘　　要：对话梅中新型复合甜味剂进行了研究。以市面上话梅的甜味剂成分作为参照,利用甜味剂之间的协同增效作用,选择合适的新型甜味剂进行复合,增加风味和口感,全部取代糖精钠和甜蜜素在话梅中的使用;通过描述性分析方法得出最优配方为:蔗糖∶APM∶甜菊糖∶AK糖=2∶1∶1∶8。经比较得出,新的配方在保证优良口感的同时,还能提高甜度、降低成本和热值,更适用于低糖型话梅的生产。The new compound sweeteners in preserved plums were studied.On the basis of plums in supermarket, we selected and used the complex of new sweeteners which could enhance the effect cooperatively and increase the flavor and taste to replace saccharin and sodium cyclamate.The best direction was： sucrose： aspartame： stevioside：acesulfame potassium = 2： 1：1 ：8Compared with the primary direction,the results showed that the new sweeteners could decrease the cost and energy, at the same time make good taste, which was adapt to make oligosaccharide preserved fruits.
