摘  要:采用感应耦合等离子体—质谱法(ICP-MS)对山药、莳药、甘薯、马铃薯、万灵薯和雪莲果中的矿物成分进行了分析。结果表明:六种根茎植物所含的钾为25389·329~7245·998mg·kg-1,钠为2296·858~31·566mg·kg-1,钙为1636·097~227·100mg·kg-1,镁为1481·384~406·624mg·kg-1,锌为27·382~4·968mg·kg-1,铁为74·873~28·411mg·kg-1,铬为1·857~0·005mg·kg-1,铜为8·772~3·959mg·kg-1,钴为0·394~0·027mg·kg-1,镍为4·368~0·597mg·kg-1,钼为0·44~0·118mg·kg-1,锰为18·092~4·084mg·kg-1,硒为0·130~0·008mg·kg-1。铅、铝、镉等有害元素含量未超出国家绿色食品标准,这表明所测6种根茎植物矿质营养丰富而安全,有利于改善人们膳食营养。Mineral elements in Dioscorea spp, Ipomoea batatas, Solanum tuberosum, Cynanchum auriculatum Royleex Wight and Smallanthus sonchifolius were determined by inductive coupled plasma mass spectrometry (ICP-MS).The results showed that the K content in six kinds of root and tuber plants ranged from 25389.329 to 7245.998mg·kg^-1 ,Na content from 2296.858 to 31.566mg·kg^-1 , Ca content from 1636.097 to 227.100mg·kg^-1, Mg content from 1481.384 to 406.624mg·kg^-1,Zn content from 27.382 to 4.968mg·kg^-1 ,Fe content from 74.873 to 28.411mg·kg^-1 ,Cr content from 1.857 to 0.005mg·kg^-1, Cu content from 8.772 to 3.959mg·kg^-1, Co content from 0.394 to 0.027mg·kg^-1 ,Ni content from 4.368 to 0.597mg·kg^-1 ,Mo content from 0.44 to 0.118mg·kg^-1 ,Mn content from 18.092 to 4.084mg·kg^-1,Se content from 0.130 to 0.008mg·kg^-1 .The Pb, Al and Cd contents have not exceeded the national green food production standard,This indicated that these root and tuber plants were rich in necessary mineral contents,safe for human consumption,and help improve our diet nutrition.
