摘　　要：介绍了涂膜保鲜技术的原理、常用的涂膜剂及其在果蔬保鲜中的应用,同时提出了尚存在的问题,并对其应用前景进行了展望。This article introduces the principle of coating preservation, material for film-coating in common use and the application in fruits and vegetables storage. The present problems and future trends of this research technique are also discussed.
