摘　　要：通过对去皮椒盐油炸花生的加速氧化试验，建立了计算其在任一贮藏温度下货架寿命的回归方程。此外，还对包装工艺和包装材料同货架寿命之间的关系作了探讨。This study focused on calculating the shelf-life of the spiced fried blanched peanuts at any storage temperature. The regressive equation which is necessary was obtained by the accelerated oxidative rancidity test. Furthermore the relation between shelf-life and packaging technology and packaging material was investigated.
