摘　　要：对酶Ｅ水解生成最高体外ＡＣＥ抑制活性的条件进行了优化，研究了水解液的氨基酸组成与分子量分布。Based on the ACE inhibitory activity,The best proteolytic conditions for Enzyme Ewere set up.Amino acid composition and molecular weight distribution of this hydrolyzate were also studied in this paper.
