摘 要:[目的]了解马鞍山市高危食品中沙门菌、O157︰H7大肠杆菌、单增李斯特菌、阪崎肠杆菌、副溶血性弧菌、金黄色葡萄球菌、弯曲菌的污染状况,提高我市食源性疾病的检测、预警和控制能力,有效地预防、预测食源性疾病的暴发。[方法]依据国家食源性疾病监测网2007~2008年年度工作手册进行。[结果]监测9大类(生肉、水产品、熟肉制品、生食蔬菜、面米食品、非发酵豆制品、婴儿食品、生奶与鲜奶、冰淇淋)食品共381份,检出食源性致病菌129株,总阳性率33.86%,其中沙门菌3.41%,单增李斯特菌14.17%,金黄色葡萄球菌16.27%;9大类食品中生肉污染最严重,阳性率70.37%,而这类食品中又以生鸡肉污染最为突出,阳性率77.78%。[结论]马鞍山市居民主要消费食品存在食源性致病菌污染,主要是沙门菌、单增李斯特菌和金黄色葡萄球菌的污染,9大类食品中生肉和面米食品污染最严重,是重要的危险食品。且食源性致病菌污染有上升趋势。[Objective] To master the food polluted condition by bacterium such as Salmonella,E.coli O157︰H7,Listeriamonocytogenes,Bando kawasaki enterobacter,V.parahaemolyticus,Staphylococcus,Campylibacter and aureusand,and to improve the ability of detecting,early warning and controlling as well as effectively prevent and forecast the break out of food-borne disease. [Methods] This study was performed according to the workbook of 2007-2008 food-bone disease surveillance networks. [Results] A total of 381 samples of foods (poultry meat, seafood animals, cooked meat products, vegetable salads, foods made Of wheat flour and rice, non-fermented soy products, infant milk formulas, milk cheese, ice-cream)were examined in Maanshan from 2007 to 2008. Among 38i samples, the food-borne pathogen was detected with an overall positive rate of 33.86%, and the detection rates of Salmonellaspp, Listeriamonocytogen and Staphylococcus aureus were 3,41%, 14,17% and 16.27%, respectively; The most serious contamination of the food-borne pathogens was found in poultry meat (70.37%), especially in uncooked chicken (77.78%). [ Conclusion] The main bacterium causes food-borne diseases were Salmonella, Listeriamonocytogenes and Staphylococcus aureus. The poultry meat and wheat flour and rice food were seriously polluted. The food contamination by pathogenic bacteria in maanshan obviously increased.
