摘 要:[目的]研究蔗糖基聚合物对成熟期毛葡萄果实营养成分的影响。[方法]以葡萄酿酒新品种NW196为供试品种,用浓度为0.25%、0.50%、0.75%、1.00%的蔗糖基聚合物水溶液于果实成熟期喷施毛葡萄植株,并于喷施当日及喷施后每隔4 d分别取果实样品进行可溶性固形物、总糖、Vc及可滴定酸等营养成分的测定。[结果]蔗糖基聚合物可作为植物生长调节剂对毛葡萄有很好的增甜降酸效果,可明显提高糖酸比,从而达到改善水果品质、增强口感的功效,其中0.50%的蔗糖基聚合物水溶液在毛葡萄成熟期喷施的综合效果最佳,可增加甜度15.09%,在喷施第12天,果实Vc含量比对照株高出30.04%。[结论]蔗糖基聚合物不但能快速提高毛葡萄中可溶性固形物、总糖和Vc的含量,还能降低可滴定酸。[ Objective] The purpose was to study the effects of sucrose-based polymers on the nutritious composition in hairy grape fruit during the mature period. [ Method] With the new brewing grape variety NW196 as the tested variety, its plants were sprayed one time by sucrose- based polymer solution with the concn, of 0.25% , 0.50% , 0.75% and 1.00% in the fruit mature period. The nutritious composition in hair- y grape samples such as soluble solids, total sugars, Vc and titratablc acid were determined on the day and every 4 d interval after spraying. [ Result] The sucrose-based polymers regarded as the plant growth regulator had very good effect of increasing sweet and reducing acid on the hairy grape and increased the ratio of sugar and acid significantly, improved the fruit quality and strengthened the function of taste, in which, the water solution of 0.50% sucrose-based polymers was found to be the best on the comprehensive effect on spraying hairy grape during the mature period. It could improve the total sugar content up to 15.09% and it made the Ve in fruit 30.04% higher than the CK plant. [ Conclu- sion] The sucrose-based polymers not only cloud increase the soluble solids, total sugars, Vc content in hairy grape, but also could reduce the titratable acid.
