摘　　要：保健酒生产有5个主要的技术关键:①水质,其质量的好坏直接影响酒的质量;②糖料添加,糖也是配制保健酒过程中不可缺少的主要用料;③药材的前处理,药材前处理是保健酒整个生产过程的关键环节;④药液的提取,影响最终调配产品的口感协调和稳定性;⑤基础酒的选择,基础酒的选择是关键步骤。There are five key technical points in the production of healthcare wine： 1. water quality： the quality of water will directly influence healthcare wine quality; 2. sugar addition： sugar is indispensable to the production of healthcare wine; 3. the pretreatment of medicinal materials： the pretreatment of medicinal materials is the key procedure in the whole production process; 4. the distillation of medicinal liquid： it would finally influence the harmony of wine taste and wine quality stability; 5. the selection of base wine： the selection of base wine is also the key procedure in the production.
