摘  要:动物源性食品中可能会残留所有因不同目的而使用的药物,从而危害消费者的身体健康。为保证动物源性食品的安全,药物残留的快速检测技术愈来愈受到关注。近年来,很多灵敏度高、操作便捷且大批量的快速检测方法不断涌现。本文综述了动物源性食品中药物残留的快速检测技术的研究进展。Due to the frequent application of chemical or veterinary drugs in animals for different purposes, these drug residues may remain in foods derived from these treated animals. A big health threat to consumers is produced during consuming these foods. In order to ensure food safety, rapid detection techniques for these drug residues in animal-origin foods have been attracted tremendous attentions of scientists. Currently, a large number of rapid detection techniques with high sensitivity, convenient operation and high throughput detection have been developed. In this paper, current progress in rapid detection techniques for chemical and veterinary drug residues in animal-origin foods are reviewed.
