摘　　要：通过调查、分析目前白酒原辅料质量可追溯性存在的问题,运用可追溯性理论,建立行之有效的白酒原辅料质量追溯制,可为管理者提供决策依据,帮助企业逐层追溯形成白酒产品质量缺陷的根本原因,进而通过分析相关的影响因素,提出相应的改进措施,提高白酒产品质量安全水平。Problems occurred in the traceability of raw materials of Chinese liquor were investigated and analysed. Effective traceability system of raw materials of liquor was constructed on the basis of traceability theory. The system will give support for strategy decision and help industry to trace the main reasons that cause quality defect of liquor and propose certain methods for the final improved liquor quality and safety.
