摘  要:以乳清蛋白和麦芽糊精构成复合型壁材,采用喷雾干燥方法制备黄酮苷元微胶囊。壁材组成为乳清蛋白∶麦芽糊精为2∶7(W∶W),单甘酯浓度0.3%,海藻酸钠浓度0.3%。芯材黄酮苷元首先溶解于无水乙醇,最适宜的芯材添加量为芯壁比1∶9(W∶W)。微胶囊化工艺参数为乳化均质压力40MPa,时间20min,喷雾干燥进风温度200℃,出风温度90℃。在最优条件下,微胶囊包埋率为91%。黄酮苷元微胶囊的扫描电镜结果显示,该微胶囊化产品具有较好的包埋效果。The microeneapsulation of flavone aglycone was prepared by spray drying, with the mixture of whey protein, maltodextrin, glyceryl monostearate and sodium alginate as wall material. The ratio of whey protein to maltodextrin (W : W), the concentration of glyceryl monostearate and sodium alginate were 2 : 7(W : W), 0.3% and 0.3%, respectively. Flavone aglycone as core material was dissolved with anhydrous ethanol and the amount of core material was the core/wall ratio 1 : 9(W : W). The optimal techniques parameter of microencapsulation was as follows., homogenizing at 40 MPa for 20 minutes and tuiee, the temperature for inlet and outlet wind being 200 ℃ and 90 ℃, respectively. The mieroencapsulation rate of flavone aglycone was 91% at optimal conditions. The SEM picture of microencapsulation of flavone aglycone showed that the microencap sulation quality was desirable.
