褶牡蛎成分组成及营养学评价研究

摘　　要：为对褶牡蛎的营养进行评价,试验测定褶牡蛎的基本成分和氨基酸组成,并对氨基酸进行评分.结果表明:牡蛎中蛋白质和不饱和脂肪酸含量极高,其中牛磺酸和必需氨基酸营养学评分高,含有丰富的矿物质锌、铁、钙等,说明褶牡蛎具有较高的营养价值.In order to evaluate the nutrition of Crassostrea plicatula, its basic ingredients and amino acid composition were measured and the amino acid was scored. Results showed that Crassostrea plicatula contained a large amount of protein and unsaturated fatty acid, the nutrition evaluation score of Taurine and the essential amino acid was high, and was rich in minerals of zinc, iron and calcium. The study shows that Crassostrea plicatula is a nutritious food.
