摘  要:将从宋河酒业优质大曲中分离筛选的红曲霉1号功能菌应用于酯化酶生产;将酯化酶应用于黄浆水酯化液生产;将所生产的黄浆水酯化液兑入底锅蒸馏串蒸试验。结果表明,试验样与对照样比较,红曲酯化酶在黄浆水酯化应用中对提高白酒质量、增加经济效益、降低生产成本具有明显的效果。No. 1 monascus functional bacteria separated from quality Daqu (made by Songhe Liquor Industry Co.Ltd.) was applied in the production of esterified enzyme. Then esterified enzyme was applied in the production of yellow slurry esterfied liquid. And the produced yellow slurry esterified liuqid was blended in bottom pot for cross-distilling & cross-steaming experiments. The results showed that compared with the contrast liquor samples, the experimental liquor samples (with the use of yellow slurry esterified liquid) had better quality and significant effects had been achieved in increasing economic benefits and reducing production cost.
