摘　　要：随着人民生活水平的提高和经济条件的改善，人们对内类制品提出更高的要求，如内制食品的质量控制、安全性、多样性及营养性等。因此，为人们提供安全营养的肉制食品仍然我国肉制品发展下一步的一个研究方向。With the enhancement of people＇s standard of living the improvement of economic conditions, people have put higher requirements forword for meat products,such as quality control,safety,diversity, nutrition and so on. Therefore, providing safe and nutritious of meat--made products for people is still our next step in the development of a meat research.
