摘 要:[目的]研究蔬菜、水果的抗氧化活性与总黄酮的相关性。[方法]采用Ferric Reducing Antioxidant Powerassay,FRAP法和分光光度法测定了51种蔬菜和30种水果的抗氧化活性、总黄酮含量,分析它们之间的相关性。[结果]蔬菜的抗氧化活性与总黄酮之间的相关系数为0.398,水果的抗氧化活性与总黄酮之间的相关系数为0.710。[结论]蔬菜、水果的抗氧化活性与总黄酮含量具有一定的相关性,但不同种类的蔬菜和水果,相关性有一定的差异。[Objective] To study the relevance between the antioxidant activation and the content of flavonoid of Vegetable and fruit. [ Methods ] The antioxidant activation and the content of flavonoid of fifty-one kinds of vegetables and thirty kinds of fruits were measured by Ferric Reducing Antioxidant Power (FRAP) assay and spectrophotometry, respectively, and the relevance between the antioxidant activation and the content of flavonoid of vegetable and fruit was compared. [ Results] The correlation coefficient between the antioxidant activation and the content of flavonoid of vegetable was 0,398, the correlation coefficient between the antioxidant activation and the content of flavonoid of fruit was 0.710. [Cor^lusion] There is some rele- vance between the antioxidant activation and the content of flavonoid of vegetable and fruit, but the relevance is different among different types of vegetables and fruits.
