摘  要:枣在我国已有7000多a的栽培历史,因其具有良好的口感和丰富的营养而倍受人们的青睐,有"活维生素丸"之称。但枣的自然保鲜能力很差,采后自然条件下极易发生软化、酒化、褐变等问题。对枣果采后生理变化方面的研究进展进行综述,介绍在贮藏过程中枣果主要生理生化指标的变化和作用,以及减压贮藏技术在枣果贮藏技术方面的应用现状及前景。枣果采后生理变化的探讨为大枣贮藏、保鲜及加工提供了理论依据,具有现实的意义。Date has been a favorites food due to its taste and nutrition, which is entitled "Living Vitamin Pill" and it boasts a eultivation history of 7 000 years in China. Yet, it is difficult to keep date fresh after pickup and date is likely to turn soft and brown. This article reviews the research progress of the physiological change in date after harvest. The changes of major physiological and biochemical indicators and their functions are discussed in this article. The present application and the prospect of hypobaric storage technique in keeping date fresh is also presented which will provide reference and insight for the storing, refreshing and processing of dates.
