摘  要:研究不同培养条件下产酯化酶霉菌的代谢产物特征。从浓香型大曲中分离得到一株产酯化酶霉菌,用Biolog微生物自动分析系统进行鉴定,改变培养温度、发酵时间、碳源物质等培养条件,用乙醇对发酵液进行萃取,并用气相色谱-质谱联用法(GC-MS)对其进行鉴定分析。结果表明,该分离菌株为黄曲霉(Aspergillus flavus)。随温度的升高,其代谢产物分子量逐渐加大,高级醇的合成逐渐增多,碳链逐渐加长;随时间的延长代谢产物的合成大致呈醇-酸-酯的变化规律,碳链短的产物先于碳链长的产物出现;分别以淀粉、蔗糖、麸皮为碳源物质时,正丁醇、异戊醇是其共有的代谢产物,以蔗糖为碳源时合成的代谢产物多为一些短链的醇、酸,以淀粉为碳源时生成了琥珀酸乙酯,以麸皮为碳源时,合成的代谢产物较少。Characterization of metabolites produced by esterase-producing mould at different conditions was studied. A strain was isolated from Luzhou-flavor Daqu identified by Biolog Microbes automated identification system. Products in fermentation broth under changed conditions of temperature, fermentation time and carbon sources were ethanol extracted and analyzed by GC-MS. The results showed that the strain is Aspergillus flavus. Molecular weight of metabolites increased with temperature increased, synthesis of high alcohol increased and carbon chain lengthened gradually at same time. When incubation was prolonged, synthesis of metabolites was showed the changes of alcohol, acid and ester, and the metabolites with shorter carbon chain occurred earlier than that of longer chain. N-butanol and isoamyl alcohol were common metabolites when starch, sucrose and wheat bran were used as carbon resources. Most of the metabolites were alcohol and acid with shorter carbon chain when sucrose was used. Diethyl succinate was produced when starch was used and metabolites were less when carbon resource was bran.
