摘  要:土壤细菌ps-5产胞外多糖经乙醇沉淀、Sevage法脱蛋白、透析、冷冻干燥等方法分离和纯化后得到粗多糖,多糖含量为0.3 mg/mL。该多糖对.OH和O2-.有较强的清除能力,当清除率达50%时所需浓度分别为0.0476、0.2770 mg/mL,而在同等条件下,使用Vc清除率达到50%所需浓度分别为0.0440、5.70 mg/mL。研究多糖对油脂的抗氧化活性,结果表明,ps-5胞外多糖可有效抑制动植物油脂的氧化。An exopolysaccharide(EPS) was extracted from a bacteria ps-5 by ethanol precipitation and pu-rified by Sevage method,dialysis and freeze drying.The crude product contained 0.3 mg/mL of polysaccharide.The polysaccharide had the scavenging action on.OH and O2-..The scavenging activity to superoxide anion and hydroxyl free radicals was represented by the content scavenged 50% of all radicals(IC50).The IC50 of exopolysaccharide to superoxide anion and hydroxyl free radicals were 0.0476 mg/mL and 0.2770 mg/mL res-pectively.The IC50 of Vc were 0.0440 mg/mL and 5.70 mg/mL under the same condition.At the same time,this exopolysaccharide had the activity of oxidation resistance to animal fat and vegetable oil effectively.
