皖北浓香型淡雅风格白酒成因初探

摘　　要：皖北浓香型淡雅风格白酒在保持原浓香型白酒风格的基础上,又融合其他香型的长处,把香融入味中,形成"淡中生味,雅中具香"的独特风格。成因与皖北南北过渡自然环境地域环境、多粮发酵、中低温制曲、独特的发酵工艺以及精心勾兑有关。Based on its original style, mellow Luzhou-flavor liquor from northern Anhui is integrates with other flavor and produce the special style and fragrance with mild aroma. The style is caused by the geographical conditions, multi-grain fermentation, the low temperature system, the unique technique of fermentation, delicate blending, and so on.
