摘 要:[目的]测定与分析赤眼鳟的含肉率、营养成分和营养价值。[方法]以10条健康赤眼鳟为研究对象,对赤眼鳟的含肉率、营养成分(水分、粗蛋白、粗脂肪、灰分)和营养价值(氨基酸组成及含量)进行测定与分析。[结果]赤眼鳟含肉率平均为74.64%±0.43%,鲜样肌肉粗水分、粗蛋白、粗脂肪、钙和磷分别是75.42%、18.05%、4.95%、0.50%和0.48%;肌肉干物质中粗水分、粗蛋白质量分数、粗脂肪质量分数、灰分质量分数、钙和磷分别为30.75%、72.52%、15.35%、0.08%、0.86%和1.28%;18种氨基酸总含量为74.89%(质量分数,干样),其中10种必需氨基酸的总量为34.54%,占氨基酸总量的46.12%,4种鲜味氨基酸的总含量为27.89%。[结论]与其他几种经济鱼类比较认为,赤眼鳟是一种营养价值高、值得开发驯养的优质淡水鱼类。[Objective] The study aimed to determine and analyze the flesh rate and the muscle nutrition component and nutritional value in Squaliobarbus curriculus Richardson.[Method] With 10 health S.curriculus as tested materials,the flesh rate and the muscle nutrition component (moisture,crude protein,crude fat,ash) and nutritional value (amino acid composition and content) in S.curriculus were measured and analyzed.[Result] The average flesh rate of S.curriculus was 74.64%±0.43%.In the fresh samples of muscle,the crude moisture,crude protein,crude fat,calcium and phosphorus were 75.42%,18.05%,4.95%,0.50% and 0.48% resp.In the dry sample of muscle,the crude moisture,crude protein mass fraction,crude fat mass fraction,ash mass fraction,Ca and P were 30.75%,72.52%,15.35%,0.08%,0.86% and 1.28%.the total content of 18 kinds of amino acids was 74.89% (mass fraction,dry weight),in which the total content of 10 kinds of essential amino acid was 34.54%,accounting for 46.12% of the total amount of amino acids,the total content of 4 kinds of flavor amino acid was 27.89%.[Conclusion] Comparison with several other economic fish species showed that S.curriculus was a kind of good freshwater fish specie with the higher nutritional value,which was worth to development and domestication.
