摘 要:为保持双孢菇贮藏品质、延长货架期,采用不同配比的气体吸收剂和不同厚度聚乙烯薄膜对双孢菇进行包装,置于4℃下贮藏,定期测定双孢菇的表面颜色、呼吸强度、失重率、硬度、PPO和POD活性的变化。结果表明:采用组成为1.44 g脱氧剂、0.5 g乙烯脱除剂、1.2 g CO2脱除剂的气体吸收剂及厚度为0.05 mm的聚乙烯薄膜包装方案,对双孢菇贮藏中的褐变具有明显的抑制作用,能够有效降低双孢蘑菇呼吸强度,延长双孢菇的贮藏保鲜期。In order to keep the quality and increase the shelf life of Agaricus bisporus,it was packaged in gas absorbent with different proportion and polyethylene film with different thickness,it was stored at 4 ℃ and its surface color,respiratory intensity,rate of weight loss,rigidity,PPO and POD activity were determined regularly.The results showed that the package scheme of adopting gas absorbent with a composition of 1.44 g deoxidizer,0.5 g ethylene scavengers and 1.2 g carbon dioxide scavengers,and polyethylene film with a thickness of 0.05 mm has obvious inhibition effect on the browning in preservation of Agaricus bisporus,it can effectively reduce the respiratory intensity and prolong the fresh-keeping storage period of Agaricus bisporus.
