三文鱼皮胶原肽体外抗氧化活性研究

摘　　要：对三文鱼皮胶原肽清除.OH、清除DPPH自由基和抑制亚油酸自氧化能力进行研究,评价三文鱼皮胶原肽的抗氧化能力。结果显示:三文鱼皮胶原肽具有较强的抗氧化能力。在相应浓度范围内,DPPH自由基最大清除率为81.32%,半抑制浓度IC50值为14.95 mg/mL;.OH最大清除率为59.54%,IC50为20.86 mg/mL;亚油酸自氧化最大抑制率为65.13%,IC50值为3.03 mg/mL。通过对三文鱼皮胶原肽抗氧化活性的研究,为其进一步开发和利用提供了参考依据。DPPH and ·OH radicals scavenging activities,as well as linoleic acid autoxidation inhibiting activity of salmon skin collagen peptides were studied to assay the antioxidant activities.Results indicated that salmon skin collagen peptides had strong antioxidant abilities.In a certain concentration range,the maximum scavenging rates to DPPH and ·OH radicals were 81.32%,59.54%,respectively,the linoleic acid autoxidation inhibiting activity was 65.13%,and the corresponding median inhibitory concentrations（IC50 values） were 14.95 mg/mL,20.86 mg/mL and 3.03 mg/mL,respectively.Through the study of antioxidant activities of salmon skin collagen peptides,it provides the reference to further developing and using salmon skin collagen peptides.
