摘 要:[目的]了解滕州市餐饮单位食(饮)具消毒效果,确定食品卫生监督的重点,防止食源性疾病的发生、传播和流行。[方法]2009年9~12月,对滕州市辖区内217家餐饮单位消毒后的3 127份食(饮)具,采用大肠菌群快速检测纸片法进行检测,依据GB 14934-94《食(饮)具消毒卫生标准》进行采样、评价和分析。[结果]检测217家餐饮单位的3 127份食(饮)具,合格的2 337份,合格率为74.74%;国有、集体与个体餐饮单位,城区与乡镇餐饮单位,大份与小份食(饮)具,电子消毒柜与药物蒸汽消毒,食(饮)具合格率差异均有统计学意义(P〈0.01)。[结论]2009年滕州市不同性质餐饮单位食(饮)具消毒效果较好。[Objective] To understand the sterilization effect of tableware in catering units in Tengzhou city,determine the key of food hygiene supervision,and prevent the occurrence,communication and prevalence of food-borne diseases.[Methods]In September-December,2009,3 127 tableware after disinfection from 217 catering units,detection was made using the coliform rapid test paper,sampling,evaluation and analysis were made according to the GB14934-94 Hygienic standard for disinfection of dinner and drinking set.[Results]3 127 tableware from 217 catering units were detected,2 337 were qualified,the qualified rate was 74.74%;There was statistical significance between the qualified rate of the national、collective and individual catering units,urban and township catering units,big and small tableware,electronic disinfector and drug steam disinfection(P0.01).[Conclusion]The sterilization effect of tableware in catering units in is good Tengzhou city,2009.
