摘 要:从化学、仿生物、细胞三个层次,水溶、脂溶两种体系研究了脂溶性茶多酚(LTP)的抗氧化特性,并与维生素E(VE ),绿茶多酚(GTP)等进行了比较⒚结果表明:对水溶性体系中的·OH,巨噬细胞呼吸爆发产生的氧自由基的清除效果为GTP> LTP> VE⒚对大分子稳定的二苯基苦基肼基(DPPH)自由基,LTP,GTP效果接近且均显著优于VE⒚在膜体系中,GTP对Fe2+ 诱导的膜脂质过氧化的抑制作用优于LTP,VE⒚而VE 对2,2'偶氮2,4二甲基戊腈(AMVN)诱导的膜脂质过氧化的抑制作用显著优于LTP, GTP,当浓度大于50 μg/m L时,LTP的抑制作用保持在25% 左右并显著优于GTP⒚LTP基本保留了原有茶多酚优良的抗氧化特性,在脂溶性体系中效果较好⒚同时给出了抗氧化剂在各体系中 50%抑制率或清除率时的浓度,即IC50In order to investigate the antioxidant properties of the novel antioxidant lipophilic tea polyphenols (LTP),we established three levels of models from chemical, imitate biological and biological systems, and compared their activities with Vitamin E (V E) and green tea polyphenols (GTP).It was found that their ability to scavenge hydroxyl radicals (·OH), and reactive oxygen species generated by macrophage's breathe burst in biological system decreased in the order of GTP>LTP>V E. In big molecular stable free radical DPPH (1,1 diphenyl 2 picylhydrazyl) system, GTP and LTP have close scavenge activities and significantly better than that of V E. It was also found that they could inhibit lipid peroxidation of liposomal suspension induced by iron and was classified as follows: GTP>V E≈LTP. The inhibitary activity on the lipid peroxidation initiated by 2,2' azobis(2,4 dimethylvaleronitrile)(AMVN) is decreased in order of V E>LTP≈GTP,when the concentration is more than 50 μg/mL ,their antioxidant activities could be classified as follows: V E >LTP>GTP. The concentration of these compounds inhibiting 50% lipid peroxidation (IC 50 )or scavenging 50% free radicals(SC 50 ) were also given in the paper.
