摘  要:香椿原产于我国中部,其嫩芽、嫩叶是我国人民历来喜食的传统名贵木本蔬菜,也是外贸出口的土特产品。由于其生产的季节性强、产量少,市场售价比一般蔬菜要高的多。近年来,我国科技人员通过速冻和冷藏手段对香椿进行保鲜,虽然从一定程度上缓解了市场上香椿供应的紧张局面,但是能够进行速冻加工和冷藏保鲜的香椿数量毕竟有限,加上香椿速冻工艺落后、产品种类少、冷藏措施不得力等原因,使得我国香椿速冻加工及冷藏保鲜还没有形成一定规模,一定程度上影响了香椿产业的快速发展。The Chinese Toona is originally produced in central China. Its tender buds and fresh leaves has always been one of the most welcomed traditional vegetable in China, and also one of the few local products that are exported to foreign markets. However, because of its seasonal production and low productivity, the market price of Chinese Toona is much higher than other vegetables. In recent years, The Chinese Toona is preservated by ways of quick-frozen and refrigerating in order to satisfy the huge demand by the market. Yet a limited amount of Chinese Toona are capable of processing and refrigerating. Plus the technique is still under development, therefore, not effective and other reasons. Making the process of freezing and refrigerating Toona has not fromed to a certain size and somewhat affected the Toona industry's rapid development.
