摘　　要：[目的]了解、分析四川省食品中铅、镉、汞、铝等金属的污染状况,为制定相应控制措施提供依据。[方法]2009年在四川省10个城市对11种食品690份进行铅、镉、汞、铝污染状况监测。[结果]食品中铅、镉、汞、铝含量的合格率分别为:97.74%,93.10%,92.14%,66%。[结论]四川省食品中金属污染的情况较普遍,部分食品存在金属超标现象,尤其油炸面制食品中铝污染问题较为严重,对此应加大监测、监管力度。[Objective]To understand and analyze the metal contamination of food in Sichuan province,in order to provide basis for formulating appropriate control measures.[Methods]690 samples of 11 types of food in 10 cities in Sichuan province had been collected to test lead,cadmium,mercury and aluminium levels in 2009.[Results]The qualified rate of lead,cadmium,mercury and aluminium level was 97.74%,93.10%,92.14%,66% in food samples respectively.[Conclusion]Metal contamination in food in Sichuan is common,and the metal levels in some foods have exceeded standards,especially the aluminum pollution in fried flour-made products which should be worth to strengthen the monitoring and supervision.
