摘　　要：茶多酚是食品贮藏保鲜中的天然添加剂,介绍了茶多酚的成分和儿茶素的结构,对茶多酚在肉及肉制品、油脂、水产品等方面的应用进行了综述,并展望了茶多酚的应用前景。Tea polyphenols is a natural additive of food storage.In this paper the composition of tea polyphenols and the structure of catechins are introduced,the application of tea polyphenols in meat and its products,oil,aquatic products is reviewed and the application prospect of tea polyphenols is forecasted.
