摘  要:以菠萝皮渣为原料,采用超声波辅助法提取多酚类物质,探讨提取剂种类及其浓度、提取时间、温度、提取次数、料液比及菠萝皮渣粒度7个单因素对多酚提取量的影响,并在单因素的基础上进行正交试验优化得出多酚提取的最佳工艺条件:溶剂为50%的乙醇,料液比为1∶40(m∶V),提取时间为20 min,菠萝皮渣粒度为50目,此条件下多酚提取量为7.98 mg/g。The extraction conditions of polyphenols from the peel residue of pineapple by Ultrasound process were studied in this paper.The effects of seven factors including organic solvent and its concentration,extraction time,temperature,extraction times,the ratio of raw materials and solution and particle size of pineapple peel residue on extraction amount of polyphenols were investigated.The best technical conditions for polyphenols extraction were obtained through orthogonal experiments based on single factor as follows: 50% ethanol was used as a modifier,ratio of raw materials and solution was 1∶40,extraction time 20 min for per gram material and the yield is 7.98 mg/g.
