摘  要:[目的]科学准确地评定食品分析实验课程的成绩。[方法]采用计算标准偏差或相对标准偏差的方法对食品分析实验成绩进行评定,根据实验数据偏差与标准偏差绝对值比值的大小进行成绩评定,把实验结果作为综合评定实验成绩的一部分。[结果]乳制品中总酸度测定结果表明,该实验方法得当,操作规范;乳制品中脂肪测定结果表明,学生的操作方法和实验的规范性值得探讨。[结论]该方法为评定食品分析实验课程的成绩提供了定量参考。[ Objective ] In order to study the grading scores of food analysis experiment on science and accuracy. [ Method ] A grading method of calculation standard deviation or relative standard deviation of food analysis experimental result was put forward. A scores was graded according to experimental data with standard deviation absolute value ratio of determination deviation,the results of experiment was as part of a comprehensive evaluation experiment scores. [ Result ] by this method application of the determination total acidity in dairy products,it indicated that the method was proper,operation norm with experiments data analys^s. The data analysis of dairy fat determination results showed students'operation method and experimental standardability to be discussed. [ Conclusion ] The method provided cluantitative reference factor for assess experiment course scores of food analysis.
