不同产区葡萄酒中氨基酸和微量元素的测定分析

摘　　要：采用全自动氨基酸分析仪对不同地区的6种葡萄酒中氨基酸进行测定,用电感耦合等离子体发射光谱仪对其中9种微量元素(Ca,Cr,Cu,Fe,K,Mg,Mn,Ni和Zn)进行测定,得出不同葡萄酒中氨基酸及9种微量元素的含量。结果表明:葡萄酒中除色氨酸外7种必需氨基酸最高占氨基酸总量的13%。葡萄酒中含量最高的氨基酸是脯氨酸,最高含量占氨基酸总量的96.5%。葡萄酒中微量元素钾的含量最高,最高比例占微量元素总量的90.2%,其次为Ca和Mg的含量较高,Fe,Mn,Cr,Cu,Ni和Zn含量较低。The amino acids and 9 trace elements（Ca,Cr,Cu,Fe,K,Mg,Mn,Ni,and Zn） in 6 grape wine from different production area were determined by automatic amino acid analyzer and inductively coupled plasma-atomic emission spectrometer（ICP-AES）.The grape wine from different production area contain different amino acids and trace elements.The results showed that seven essential amino acids（apart from tryptophan） account for 13% of total amino acids.Proline are the highest levels of amino acids,accounting for 96.5% of total amino acids.Kalii elements in the potassium content of the highest,accounting for 90.2 % of total trace elements.Grape wine contained relatively high levels of Ca and Mg,and the content of Fe、Mn、Cr、Cu、Ni and Zn was relatively low.
