摘  要:通过向脱色白土中添加不同种类和含量的重金属,讨论重金属对大豆油脂品质的影响。经实验可知,脱色过程中大豆油脂的过氧化值和酸值均随着白土中各重金属添加量的增加而升高。这主要是由于这四种重金属在脱色过程中充当了助氧化剂的作用,其助氧化顺序为:铅>铜>锌>铬。并且,随着金属含量的增高,产品的脱色率也有不同程度的下降。此外,白土中铬、锌、铜、铅等重金属的存在,可以造成脱色油脂中反式脂肪酸含量上升,重金属含量越高,反式脂肪酸含量越高。其中,金属铅对反式脂肪酸含量的影响最为明显。The effects of heavy metals which were added by different types and levels to the bleaching clay decolorant on the quality of soybean oil was studied. The results showed that peroxide value,acid value increased with heavy metals content increased in decolorant. This was mainly due to heavy metals of the four different types acted as antioxidants in the bleaching processes,the assistant oxidation following order was: Pb〉Cu〉Zn〉Cr. With the metal content increased,the decolorization rate declined varying degrees. In addition, the presence of chromium,zinc,copper and lead caused increasing in trans fatty acid content of bleaching oil, the more heavy metal was contained,the more trans fatty acids was produced. It was lead which have the greatest effect on the quality of trans fatty acids.
