摘　　要：异硫氰酸酯(ITCs)是一类通式为R-N=C=S的有机化合物。它们是十字花科某些蔬菜的独特风味成分,具有多种生理活性。重点对ITCs定性、定量分析方法的最新研究进展进行了系统的分析和介绍。Isothiocyanates are a kind of organic compounds with the general formula R-N=C=S. They are special flavour compounds of some cruciferous vegetables and have many biological properties. The qualitative analysis and quantitative analysis methods of Isothiocyanates were given a systemic analysis and introduction about the newly research progress.
