摘 要:以天然肠衣为研究对象,探讨不同抗氧化剂及其复配剂对肠衣脂肪氧化与肠衣色泽的影响。结果表明:二丁基羟基甲苯(BHT)、V_E和异V_C钠的复配在抑制脂肪氧化和肠衣色泽保护上效果显著,均优于单一抗氧化剂。运用混料设计方法对抗氧剂配方进行优化,将复配试验中各成分的含量限定在0.005%~0.01%内,建立了各成分比例与肠衣色差率(K_(△E))间的回归模型,复配结果表明:经0.005%BHT、0.01%V_E、0.005%异V_C钠处理后,肠衣K_(△E)最小,护色效果最为明显。Three type of antioxidant with different concentrations were individually applied in the study of fat oxidation and color property of nature casings.The result showed;0.005%BHT,0.02%VE and 0.005%sodium erythorbate had a good effect to inhibit fat oxidation and to protect color fading than other testing groups.Mixture design methodology was used to optimize antioxidant composites formula,the proportion of every antioxidant were limited in the range of 0.005%to 0.01%.The regression model of relationship between proportion and color rate of K(ΔE) was also established.The result were that treated with the combination of 0.005%BHT,0.01%VE and 0.005%sodium erythorbate,K(ΔE) was the smallest and casing's color was the best.
