摘  要:目的了解昆山市餐饮业凉菜间的卫生状况,对各型餐饮单位卫生状况进行比较。方法 2011年5-7月对65家有凉菜间的饭店进行卫生学调查,并随机抽取125份凉菜进行卫生学检验。结果中小型餐饮单位卫生管理不到位,小型餐饮单位卫生制度健全率为82%,中小型餐饮单位卫生设施齐全率在72%以下,紫外线灯设置合格率60%以下,凉菜间温度合格率仅为59%,凉菜检验合格率低于70%。结论昆山市部分中小餐饮单位凉菜间卫生状况不佳,大型餐饮单位好于中小型餐饮单位。建议严把许可关,推进量化分级制度实施,加强卫生知识培训,建立并完善自身管理制度,加强现场卫生监督和凉菜监测工作力度。Objective To understand the sanitary condition of cold dish preparing room of restaurants in KunShan and compare health status of all types of catering units.Method During April of 2010 to July,we carried out hygienic investigation to 65 hotels and 125 samples were randomly selected for hygiene inspection.Results The health supervision of small and medium sized catering units was not imperfect,perfect rate of sanitation system among small and medium sized catering units was 82%,health facilities complete rate was 72%,UV lamps install qualified rate was under 60%,pass rate of temperature of cold dish preparing room was 58.5%,and cold dishes was less than 70%.Conclusions The health status of small and medium sized catering units in Kunshan was not good,and large catering units were better.Stricting the permit,promoting quantitative classification system implementation,strengthening health information training,establish and improve their own management system,enhance the supervision and cold-site health monitoring efforts could improve the hygienic quality.
