摘  要:研究了以1619脂肪酶为催化剂,用玉米油甘油解制备双、单甘酯的影响因素。试验结果表明,适宜的工艺条件是:pH值75,甘油含水量55%,酶浓度400~600/g脂肪,玉米油甘油摩尔比1∶1,反应温度20℃,搅拌速度720r/min。在上述条件下反应8h,双、单甘酯含量>76%。同时,报道了反应进程的监测和产品分析方法。In this paper,the influential factors of resulting in di-and monoglycerides by glycerolysis of corn oil,using lipase enzyme as a catalyst were studied. It is shown that the optimat conditions are pH7.5, a water content in the glycerol phase5.5%, the enzyme concentration between 400 and 600 units/g fat, the fat glycerol ratio at 1∶1, temperature 20℃,the rate of stirring 720 r/min. The yield of DG, MG is over 76% when lipase catalyzed fat glycerolysis is carried on 8 hours at the same time, the methods of monitoring process and product analysis were discussed, too.
