摘  要:利用差示扫描量热仪(DSC)和质构仪对6种挤压重组米淀粉的回生特性和质构特性进行了研究,且分析了L-α-磷脂酰胆碱含量对挤压重组米淀粉回生影响的Avrami方程。试验结果表明:L-α-磷脂酰胆碱对挤压重组米的硬度有较大影响,当添加L-α-磷脂酰胆碱的含量在0.3%~0.7%之间时,添加量越大,挤压重组米存放相同时间的硬度值越低;L-α-磷脂酰胆碱对挤压重组米的老化有明显作用,降低了重结晶的增长速率,回生受到抑制;当淀粉分支度一定的情况下,随着L-α-磷脂酰胆碱含量的升高,速率常数k值降低,晶体的成核方式也由瞬间成核向自发成核方式转化。The retrogradation and texture characteristics of six kinds of Restructuring rice starch were studied by DSC and texture analyser, and the Avrami equation of L -α- PC on retrogradation of Restructuring rice addition was analyzed. The results indicated that L-α- PC have a greater impact on Restructuring rice hardness. When the L -α- PC addition is between 0.3% to 0.7% ,the greater the L -α- PC addition,the lower Restructuring rice hard- ness in the same time ; L -α- PC plays a significant role in Restructuring rice retrogradation, reduces the growth rate of recrystallization and Retrogradation was inhibited ; when the degree of branching of starch in certain circumstances, with the L-α-PC addition increased, k values is descended, and crystal nucleation is also convert from moment of nucleation mode to the spontaneous nucleation.
