摘　　要：嘌呤代谢会导致尿酸沉积,最终引发痛风。人体中嘌呤的一个重要来源便是食物中的嘌呤,因此检测食品中的嘌呤含量很有意义。本文对不同食品样品的前处理方法和嘌呤物质的检测方法进行了综述,为人们的健康饮食提供科学指导。Purine metabolism will cause uric acid deposition,eventually cause gout.Diet is an important source of human purine.So detection of purine content in food is very meaningful.Pretreatment methods in different food samples and some kinds of detection methods of purine compounds were reviewed,in order to provide scientific diet guidance for human heath.
