摘　　要：醋蛋液是传统的食疗保健品,具有康复、治疗、预防三效合一的功能。对近年来醋蛋的浸泡工艺流程、浸泡条件、醋蛋液的一般营养成分、游离氨基酸组成、无机元素分析及醋蛋液的保健及药理功能进行了综述,指出醋蛋液开发存在的问题,并给出了建议。Vinegar egg-juice is a traditional food,which has rehabilitation,prevention,treatment with three way integration function.In this paper vinegar soaking process,soaking conditions,general nutritional composition and free amino acids and inorganic element analysis of Vinegar egg-juice,the vinegar egg-juice health and pharmacological functions were reviewed,points out the problems in the development of vinegar egg-juice,and gives suggestions.
