摘　　要：[目的]明确黄渤海水域栉孔扇贝加工废弃液中的营养及功能成分。[方法]取山东烟台的栉孔扇贝废弃液为材料,采用83550型氨基酸自动分析仪和分光光度法分析栉孔扇贝废弃液的浓缩液中的有关营养功能成分。[结果]山东烟台栉孔扇贝加工废弃液中含有8种人体必需氨基酸,牛磺酸含量为1.97%,蛋白质和总糖的平均含量分别为11.82%和12.68%。[结论]扇贝煮汤营养物质含量丰富,且含有大量的鲜味物质,是加工调味品的理想原料。[ Objective ] To confirm the nutrients and functional components in Chlamys farreri waste fluids. [ Method ] With Chlamys farreri waste fluids taken from Yantai as material, the relative nutrient and functional components in concentrated Chlamys farreri waste fluids were analyzed by using Model 835-50 automatic amino acid analyzer and speetrophotometry. [ Result] The Chlamys farreri waste fluids contained eight kinds of amino acids, 1.97% taurine, 12.68% and 11.82% of total sugar and protein. [ Conclusion ] The Chlamys farreri is fresh with rich nutrients, it can be used as an important resource for development of seafood condiment.
