摘  要:对渗漏窖池进行了修补,研究了不同投粮生产方式对修补后窖池所产基酒品质的影响。结果表明,对窖池的修补有效解决了窖池渗漏问题,采用投粮建窖法进行生产要优于走窖法,但需加强窖池内微生物环境的重建,以更好地促进基酒产、质量的提升,使其达到正常窖池水平。The leaked pit was repaired and the effects of different grains feeding methods on base liquor quality produced in repaired pit were in-vestigated. The results showed that the repair of pit could effectively settle leakage problem of pit, and feeding grains was better than one by one, however, the reconstruction of microbial environment in pits should be strengthened which could further improve the quality and the yield of base liquor as normal pits level.
