摘 要:以乙醚为提取溶剂,三甲基硅烷化为衍生化方法,使用气质联用(GC-MS)技术探究冷破碎苹果皮渣和肉渣中脂溶性成分的组成。结果表明,索氏提取冷破碎苹果皮渣和肉渣脂溶性成分得率分别为10.21%和6.87%;苹果皮渣和肉渣乙醚提取物组成种类和含量均有差异,皮渣中脂溶性成分种类多于肉渣,分别鉴定出44种和37种脂溶性成分;皮渣中酯类化合物相对含量最高,为49.32%;肉渣中的主要成分是酸类化合物,相对含量达53.92%;烷烃类化合物的种类和相对含量在皮渣和肉渣中差异较小。The fat-soluble components from cold-break apple peel and pulp pomace are extracted by soxhler extraction with ethyl ether as solvent, derived by trimethylsilylation and then analyzed by GC-MS. The results show that: the yields of fat-soluble components from apple peel and pulp pomace are 10.21% and 6.87% respectively; constitutes and contents are also different, 44 and 37 compounds are detected from apple peel and pulp pomace respectivdy. The highest relative content of all the components in peel pomace is esters which account for 49.32%, while the main ingredients in pulp pomace are fatty acids which account for 53.92% of all the detected compounds. Small differences in types and relative content of alkanes from peel and pulp pomace are found. The test results provide relevant data to clarify the composition of the fat-soluble components in different parts of apple pomace (peel and pulp) .
