摘 要:采用布鲁克核磁仪(600兆)做H谱全扫,根据H谱的化学位移和积分面积进行归纳总结,建立了不同种类植物油和不同来源地沟油中H谱变化的规律。本方法一共开发出12个指标对植物油和地沟油进行鉴别,同时引进统计分析方法,在对植物油和地沟油的样本数据库聚类分析基础上,对考核盲样进行判别分析。采用该方法对卫生部两次考核盲样进行判别分析,准确率可达到90%,表明核磁共振方法是一种有效的地沟油鉴别方法。Using Brooke nuclear magnetic resonance spectrometry(600 M)for H spectrum full scan,the H spectrum characteristics of different types of vegetable oil and different sources of hogwash oil were established according to the statistical data analysis and induction of the H spectrum chemical shift and integral area.At present,12 indexes were developed for the vegetable oil and hogwash oil determination.In addition,the statistical analysis method was introduced for the cluster analysis of different types of vegetable oils and different sources of hogwash oil,and then for the discrimination analysis for the blind assessment tests.The methods were applied to distinguish hogwash oils from good vegetable oils in 2 blind assessment tests.The both tests were of more than 90% accuracy and it is showed that the nuclear magnetic resonance method was effective for hogwash oil determination.
