摘  要:采用有机溶剂从海带Laminaria japonica中提取海带类胡萝卜素,分离纯化后通过过氧化值(POV)法和共轭双键氢过氧化物(CDHP)法,研究岩藻黄素对猪油自动氧化和大豆油光敏氧化的影响。结果表明:海带岩藻黄素能抑制猪油的自动氧化,且岩藻黄素和L-抗坏血酸(VC)有很好的协同抗氧化作用;在较低岩藻黄素含量范围内,岩藻黄素能抑制豆油光敏氧化,且随岩藻黄素含量的增加抑制作用增强,当岩藻黄素增加到一定量时(≥0.0025%),表现出促氧化作用。本研究结果表明,POV法和CDHP法具有很好的线性相关性,可采用方便快速的CDHP法衡量油脂的过氧化指标。Fucoxanthin was separated and purified from the carotenoids extracted from kelp Laminaria japontca by organic solvents. The influences of fucoxanthin on auto-oxidation of lard and photosensitized oxidation of soybean oil were investigated by peroxide value (POV) method and conjugated double bond hydroperoxide (CDHP) meth- od. The results showed that fucoxanthin was found to inhibit auto-oxidation of the lard, showing remarkable syner- gy effects with VC extending the induction period of the lard auto-oxidation. Fucoxanthin at low concentration ( ul- timate concentration ~〈0. 0010% ) was found to lead to inhibitory effect on photosensitized oxidation of soybean oil, being enhanced with increase in concentration, until ukimate concentrations〉0. 0025%. It was also found that the POV method had strong relevance to CDHP method.
