摘 要:为解决脱皮花生仁贮藏期间极易氧化劣变的技术难题,本文对脱皮花生仁充气密闭贮藏技术进行了研究。结果表明,充氮气和充少量二氧化碳结块贮藏处理均能有效保持脱皮花生仁品质,但综合效果以充少量二氧化碳结块处理最好;不同包装材料贮藏效果不同,使用真空包装袋贮藏的脱皮花生仁品质优于聚乙烯薄膜包装袋;光照对贮藏效果影响明显,脱皮花生仁应避光贮藏。In order to solve the oxidation deterioration problem of the peeled peanut during storage, the effects of gas filling packaging on the quality during the storage are investigated in this paper. The results showed that both nitrogen gas packing and carbon dioxide packing (agglomeration) could prevent oxidation effectively, but the later packing had better effect. Packaging materials affect the storage effects. Experiments showed that the vacuum bag had better storage effect than the polyethylene bag. The storage quality was also affected by illumination during storage. The results showed dark storage was better than illumination.
